Baked Potatoes

Baked potatoes are a classic English comfort food that can be filled with a wide variety of delicious ingredients. Baked in their skins until perfectly tender, they are especially delicious filled with sour cream and fresh herbs, topped with slices of smoked salmon.
These baked potatoes pair beautifully with a glass of TAL 1930 Alto Adige DOC.

Ingredients for 4 servings

8   medium potatoes
  Extra-virgin olive oil
400 g   sour cream
1 tbsp   chopped chives
1 tsp   chopped parsley
8 slices   smoked salmon
2 tbsp   capers
  Salt
  Pepper

Preparation

Preheat the oven to 200°C (fan-assisted).
Wash the potatoes thoroughly, as they will be baked with their skins on. Prick them several times with a fork, brush them all over with extra-virgin olive oil, and season with salt and pepper. Place the potatoes in a baking dish and bake for approximately 45 minutes. Check for doneness by piercing them with a fork – they should be very soft on the inside.

Meanwhile, prepare the filling. Place the sour cream, chopped chives, and parsley in a small bowl. Season with salt and pepper and mix well.

Once the potatoes are cooked, remove them from the oven. Cut a slit lengthwise along the top of each potato and gently open them. Lightly mash the flesh with a fork, then fill with the sour cream mixture, smoked salmon slices, and capers.

Serve the baked potatoes with a glass of TAL 1930 Alto Adige DOC.
